Wonton Soup
Wontons
Ingredients
- 3 pieces scallions; small pieces
- 1 package wonton wrappers
- 6 oz shrimp (size 41-45); peeled, deveined, bits
- 1.5 tsp cornstarch
- 1.5 dash white pepper
- 18 oz pork shoulder; bits
- 3 tbsp cornstarch
- 1.5 tsp salt
- 0.75 tsp white pepper
- 1.5 tsp sugar
- 1.5 tbsp oyster sauce
- 3 tbsp water
- 1.5 tsp chicken bouillon
- 1.5 tbsp sesame oil
Instructions
- Rinse pork bits in water to get blood out
- Drain and squeeze water out
- Mix with cornstarch, salt, white pepper, sugar, oyster sauce, water, chicken bouillon
- Mix with sesame oil
- Let it rest for 30 minutes
- In separate bowl, mix shrimp with cornstarch and white pepper
- Mix pork, shrimp, and scallions
Noodles
Ingredients
- 15 oz wonton noodles
- 30 wontons
- 12 oz bok choy; quartered
- 1 piece scallion; small pieces
- 8 piece shrimp; peeled, deveined
- 14 oz chicken broth
- 4 cup water
- 1 tsp salt
- 1 tbsp olive oil
- 1 tbsp fish sauce
- 1 tsp sesame oil
- 0.25 tsp white pepper
Instructions
- Bring pot of water to boil
- Spread noodles out
- Place noodles in pot for 1 minute
- Dunk them in cold water
- Place in pot for 15-20 seconds
- Transfer to bowl
- Mix in 1 tbsp olive oil
- Add water and chicken broth to pot
- Bring to boil
- Add olive oil, salt, bok choy
- Cover on high heat for 1-2 minutes until pot returns to boil
- Add fish sauce, sesame oil, white pepper
