Wonton Soup

Wontons

Ingredients

  • 3 pieces scallions; small pieces
  • 1 package wonton wrappers
  • 6 oz shrimp (size 41-45); peeled, deveined, bits
  • 1.5 tsp cornstarch
  • 1.5 dash white pepper
  • 18 oz pork shoulder; bits
  • 3 tbsp cornstarch
  • 1.5 tsp salt
  • 0.75 tsp white pepper
  • 1.5 tsp sugar
  • 1.5 tbsp oyster sauce
  • 3 tbsp water
  • 1.5 tsp chicken bouillon
  • 1.5 tbsp sesame oil

Instructions

  1. Rinse pork bits in water to get blood out
  2. Drain and squeeze water out
  3. Mix with cornstarch, salt, white pepper, sugar, oyster sauce, water, chicken bouillon
  4. Mix with sesame oil
  5. Let it rest for 30 minutes
  6. In separate bowl, mix shrimp with cornstarch and white pepper
  7. Mix pork, shrimp, and scallions

Noodles

Ingredients

  • 15 oz wonton noodles
  • 30 wontons
  • 12 oz bok choy; quartered
  • 1 piece scallion; small pieces
  • 8 piece shrimp; peeled, deveined
  • 14 oz chicken broth
  • 4 cup water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 0.25 tsp white pepper

Instructions

  1. Bring pot of water to boil
  2. Spread noodles out
  3. Place noodles in pot for 1 minute
  4. Dunk them in cold water
  5. Place in pot for 15-20 seconds
  6. Transfer to bowl
  7. Mix in 1 tbsp olive oil
  8. Add water and chicken broth to pot
  9. Bring to boil
  10. Add olive oil, salt, bok choy
  11. Cover on high heat for 1-2 minutes until pot returns to boil
  12. Add fish sauce, sesame oil, white pepper
