Marinated Egg

  • soy sauce
  • mirin
  • water
  1. Add 1/2 inch of water to pot.
  2. Bring pot to boil with lid over.
  3. Place eggs into pot, Hold for 6–7 minutes.
  4. Immediately place in ice water to cool.
  5. Peel eggs and cover in mixture of soy sauce, mirin, and water. Use 1:1:2 or 1:1:3 ratio.
  6. Hold for 6–8 hours.

Equilibrium Brine

  1. Instead of using the above ratio, cover eggs with water and record total weight of eggs and water.
  2. Add 10% each of this weight in soy sauce and mirin.
  3. Hold for 2 days.
