Marinated Egg
- soy sauce
- mirin
- water
- Add 1/2 inch of water to pot.
- Bring pot to boil with lid over.
- Place eggs into pot, Hold for 6–7 minutes.
- Immediately place in ice water to cool.
- Peel eggs and cover in mixture of soy sauce, mirin, and water. Use 1:1:2 or 1:1:3 ratio.
- Hold for 6–8 hours.
Equilibrium Brine
- Instead of using the above ratio, cover eggs with water and record total weight of eggs and water.
- Add 10% each of this weight in soy sauce and mirin.
- Hold for 2 days.
