Awase Dashi
- 4 cups water
- 10 g kombu
- 10 g bonito flakes
- Soak kombu in water for 30+ minutes, ideally 6+ hours.
- Place kombu in saucepan and bring to simmer over medium-low heat.
- Just before boiling, remove the kombu.
- Add bonito flakes and bring to a boil.
- Once boiling reduce heat and simmer for 30 seconds.
- Let bonito flakes sink to bottom, about 10 minutes.
- Remove bonito flakes.
Shiitake Dashi
- 2 cups water
- 3 dried shiitake mushrooms
- Soak mushrooms in cold water for a few hours, ideally overnight.
- Squeeze to drain mushrooms into water.
- Strain through seive.
