Dashi

Awase Dashi

  • 4 cups water
  • 10 g kombu
  • 10 g bonito flakes
  1. Soak kombu in water for 30+ minutes, ideally 6+ hours.
  2. Place kombu in saucepan and bring to simmer over medium-low heat.
  3. Just before boiling, remove the kombu.
  4. Add bonito flakes and bring to a boil.
  5. Once boiling reduce heat and simmer for 30 seconds.
  6. Let bonito flakes sink to bottom, about 10 minutes.
  7. Remove bonito flakes.

Shiitake Dashi

  • 2 cups water
  • 3 dried shiitake mushrooms
  1. Soak mushrooms in cold water for a few hours, ideally overnight.
  2. Squeeze to drain mushrooms into water.
  3. Strain through seive.
