Homemade Curry Roux

Ingredients

  • Makes enough for 4 cups of liquid.
  • 3 tbsp butter
  • 4 tbsp all purpose flour
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1/4 tsp cayenne pepper (optional spicy)

Instructions

  1. Melt butter in pan.
  2. Add flour.
  3. Continuously stir as it will easily burn for 12–15 minutes on low heat. The roux will turn light brown.
  4. Add garam masala, curry powder, and cayenne pepper.
  5. Mix for 30 seconds then remove from heat.
