HK Baked Pork Chop
Ingredients
Pork
- 1/2 lb pork shoulder or pork chops, 2x3 in long pieces 1cm thick
- 1 cup shedded cheese cheddar and mozzarella mix
- 1 tbsp neutral oil
Pork Marinade
- 1 tsp regular soy sauce
- 2 tsp cornstarch
- 1/2 tsp Shaoxing Cooking Wine
- 1/2 tbsp neutral oil
- 1/4 tsp baking soda
- 1/4 tsp black pepper
Cornstarch Slurry
- 1/2 tbsp cornstarch
- 1/4 cup water
Fried Rice
- 4 large eggs
- 4 cups jasmine rice
- 1 cup frozen mixed vegetables
- 2.5 tbsp regular soy sauce
- 1 tbsp sesame oil
Tomato Onion Sauce
- 1 cup onion, thinly sliced
- 29 fl oz crushed tomatoes, canned
- 1/4 cup ketchup
- 1 tbsp oyster sauce
- 2 tbsp white granulated sugar
Instructions
- Prepare pork marinade and cornstarch slurry
- Mix pork slices with pork marinade
- Medium-high heat, scramble the eggs
- Stir fry rice
- Add eggs, frozen vegetables, and season with fried rice ingredients, then transfer to baking dish
- Medium heat, stir fry pork, then place on top of the rice
- Medium-high heat, fry onions until browned on the edges
- Add tomatoes and season with onion sauce ingredients
- Medium heat, add cornstarch slurry, then bring to boil to thicken and reduce
- Pour tomato sauce over the pork and sprinkle shredded cheese on top
- Broil in the oven at 500ºF for 10 minutes until cheese has melted and is slightly browned
